Abstract
Preservative potential of extracts of lemongrass extracts against some pathogenic fungi isolated from spoilt cocoyam sold within Anambra State were carried out in this study. The lemongrass were collected from Uli and extracted using ethanol and water in cold maceration method for 72hrs. Phytochemical screening of the plants was conducted using different standard methods; this revealed the presence of alkaloid, saponin, tannins, flavonoid, phytate, oxalate and phenol in all the plants but at different concentrations. Cocoyam sold within Anambra state were also cultured using PDA agar and the result of this study revealed the presence of 5 different fungal species from spoilt cocoyam (Aspergillus niger, Penicillium citrinum, Fusarium solani, Rhizopus stolonifer and Mucor piriformis). These fungal species were confirmed to be causative agents of the spoilage through the pathogenicity test. The preservative potential of the lemongrass extract in terms of its ability to inhibit fungal growth increased with a corresponding increase in extract concentration. Ethanol extract showed an effective rate of inhibition on the mycelia growth of all the test fungi whereas, water extract showed a lower inhibition rate. 100%ethanol extract concentration showed a significant (P
